Ingredients

Marinade and Chicken

  • 2 Boneless, Skinless Chicken Breasts
  • 2 tablespoons Olive oil
  • 1 tablespoon Fresh lime juice
  • ½ teaspoon Paprika
  • ½ teaspoon Ground Cumin
  • ¼ teaspoon Chili Powder
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Onion Powder
  • ¼ teaspoon Dried Oregano
  • A pinch of salt and pepper (or to taste)

Rice

  • 1 Cup Cooked Brown Rice
  • 1 tablespoon Lime Juice
  • A small handful of chopped cilantro
  • Sea salt and freshly ground black pepper (to taste)

Bowl Ingredients and Toppings

  • 1 Small Avocado (sliced)
  • ½ Cup Black Beans
  • ½ Cup Canned corn, drained (or grilled)
  • ⅓ Cup Cherry Tomatoes (cut into quarters)

  • ½ Red onion (diced)
  • 1 Jalapeno Pepper (sliced or chopped)

Instructions

  1. Prepare the marinade: In a ziploc bag, combine 2 tablespoons olive oil, 1 tablespoon fresh lime juice, ½ teaspoon paprika, ½ teaspoon ground cumin, ¼ teaspoon chili powder, ¼ teaspoon garlic powder, ¼ teaspoon onion powder, ¼ teaspoon dried oregano, and a pinch of salt and pepper. Mix until smooth.
  2. Marinate the chicken: Add 2 boneless, skinless chicken breasts into the bag, seal it, and shake to ensure the chicken is evenly coated with the marinade.
  3. Grill the chicken: Heat a grill pan or outdoor grill over medium-high heat. Place the chicken on the grill and cook for about 5-7 minutes per side, or until the chicken is cooked through with no pink inside.
