Description

A refreshing and simple Greek Yogurt Dessert Parfait featuring layers of tangy lemon-zested Greek yogurt, sweetened strawberries, and vibrant blueberry compote. This parfait is a quick, healthy treat perfect for breakfast, snack, or dessert, highlighting fresh fruit flavors and creamy texture.

Ingredients

Yogurt Mixture

  • 16 ounces plain Greek yogurt
  • Zest of 1 medium lemon
  • 1 pinch sea salt

Strawberries

  • 6 to 8 large strawberries, sliced
  • ½ to 1 teaspoon granulated sugar

Blueberry Compote

  • 4 servings blueberry compote (prepared separately, see notes)

Instructions

  1. Prep the yogurt and strawberries: Add the lemon zest and sea salt to the plain Greek yogurt and stir thoroughly until all ingredients are fully incorporated and the yogurt is evenly flavored. In a separate bowl, combine the sliced strawberries with granulated sugar and toss gently to coat the fruit, allowing the strawberries to macerate and release their natural juices.
  2. Layer the parfait: Using 8-ounce glass jars or parfait cups, spoon a layer of blueberry compote at the bottom. Next, add a layer of the lemon-zested Greek yogurt, followed by a layer of the sugared strawberries. Repeat the sequence to create a second tier of blueberry compote, yogurt, and strawberries.
  3. Serve or store: Serve the parfaits immediately to enjoy fresh flavors and textures. Alternatively, secure jars with lids and refrigerate until needed; parfaits are best consumed within 1-2 days for optimal freshness and texture.

Notes

  • Blueberry compote can be made by simmering fresh or frozen blueberries with a bit of sugar and lemon juice until the mixture thickens slightly; cool before layering.
  • Adjust sugar quantities based on the sweetness of the fruit and personal preference.
  • For a dairy-free variation, substitute Greek yogurt with a plant-based yogurt alternative.
  • Parfaits can be prepared ahead of time and stored refrigerated for up to 2 days.
