Dry Ingredients
- 1 cup + 3 tablespoons all-purpose flour or gluten-free flour (5.6 ounces), plus more for dusting

Instructions
- Preheat and Prepare Dry Ingredients: Preheat your oven to 375°F (190°C) and line a large baking sheet with parchment paper. In a large bowl, whisk together the all-purpose flour, baking powder, and salt to evenly combine the dry ingredients.
- Mix Wet Ingredients and Form Dough: Add the Greek yogurt to the dry ingredients. Stir initially with a spatula, then use your hands to combine everything into a ball of dough. Knead the dough about 20 times until it is no longer sticky but not dry either. Cover with a towel and let it rest for 10 minutes to hydrate.
- Shape the Bagels: Transfer the dough to a floured surface. Shape the dough into a log and divide it into 4 equal pieces. Roll each piece into a longer rope and then shape into a circular bagel shape by pinching the ends together firmly. Place the bagels on the prepared baking sheet. Repeat with all dough pieces.
- Apply Egg Wash and Add Toppings: In a small bowl, whisk the egg to make an egg wash. Brush each bagel generously with the egg wash, then sprinkle with your choice of toppings such as everything bagel seasoning, sesame seeds, poppy seeds, or onion flakes. Alternatively, leave them plain.
- Bake the Bagels: Bake the bagels in the preheated oven for about 25 minutes or until they are puffed up and golden brown on the outside.
- Cool and Serve: Remove the bagels from the oven and allow them to cool on the baking sheet for 15 minutes before slicing. This resting period is important for perfect texture. Slice and serve with your favorite spreads or toppings.
