Description

Deliciously fudgy zucchini brownies that combine rich chocolate flavor with moist, shredded zucchini for a unique and wholesome twist. These brownies are perfectly sweet, dense, and loaded with melty chocolate chips, making them an ideal treat for chocolate lovers looking to sneak in some veggies.

Ingredients

Wet Ingredients

  • 1 cup sugar
  • 1/2 cup packed brown sugar
  • 2/3 cup butter, cubed
  • 1/4 cup water
  • 1-3/4 cups semisweet chocolate chips
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 1-3/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt

Vegetables

  • 2 cups shredded zucchini, squeezed dry

Instructions

  1. Melt the wet ingredients: Preheat the oven to 325°F and line a 13×9-inch baking pan with aluminum foil, allowing ends to hang over the sides. In a heavy saucepan, combine granulated sugar, brown sugar, cubed butter, and water. Bring the mixture to a boil over medium heat, stirring constantly to dissolve sugars and melt butter. Remove from heat and stir in the semisweet chocolate chips until completely melted and smooth. Allow this chocolate mixture to cool slightly to prevent scrambling the eggs in the next step.
  2. Incorporate eggs and vanilla: In a separate bowl, whisk the four room-temperature eggs for about three minutes until foamy and light. Add vanilla extract and gradually whisk the egg mixture into the cooled chocolate mixture, blending thoroughly without cooking the eggs.
  3. Combine dry ingredients: In another bowl, whisk together the all-purpose flour, baking soda, and salt until evenly mixed.
  4. Mix flour and zucchini: Use a rubber spatula or wooden spoon to fold the dry flour mixture gently into the chocolate and egg mixture. Then fold in the shredded zucchini, making sure it is evenly dispersed throughout the batter. The zucchini adds moisture and a subtle vegetable flavor without overpowering the brownies.
  5. Bake the brownies: Pour the batter into the prepared baking pan and spread evenly. Bake on a lower oven rack for 33 to 36 minutes. Insert a toothpick into the center; it should come out with moist crumbs but not wet batter. Avoid overbaking to keep the brownies fudgy.
  6. Cool and serve: Remove brownies from the oven and place on a wire rack to cool in the pan. Once cooled, lift brownies out using the foil edges and transfer to a cutting board. Let cool completely to room temperature before cutting into bars. Discard the aluminum foil.

Notes

  • Make sure to squeeze excess moisture from the shredded zucchini to prevent soggy brownies.
  • Allow the chocolate mixture to cool enough before adding eggs to avoid scrambling.
  • Use room temperature eggs for better incorporation and texture.
  • Do not overbake; brownies should remain fudgy and moist.
  • The aluminum foil lining makes it easy to lift the brownies out of the pan for cutting.
