Puff Pastry

  • 14 oz puff pastry dough

Filling

  • 4 yellow peaches
  • 6 tbsp mascarpone cheese
  • 1 vanilla bean (seeds only)
  • 1 tsp lemon zest
  • 1/2 lemon (juice only, for peaches)

Toppings & Garnishes

  • 2 tbsp wild honey
  • 2 tbsp powdered sugar (for dusting)
  • 2 tbsp peach preserves (optional)
  • 1 tsp lemon juice (to mix with peach preserves, optional)
  • Edible flower blossoms (for garnish)


Instructions

  1. Defrost Puff Pastry: Defrost your puff pastry according to the directions on the box to ensure it is pliable and easy to roll.
  2. Prepare Puff Pastry: Lightly dust your pastry board or kitchen counter with flour. Roll out the puff pastry dough evenly using a rolling pin to prevent sticking.
  3. Cut Strips: Cut the rolled-out puff pastry into 6 horizontal strips of roughly equal size.
  4. Preheat Oven: Preheat your oven to 375°F (190°C) to prepare for baking the peach roses.
  5. Make Mascarpone Mixture: In a small bowl, combine the mascarpone cheese, lemon zest, and seeds extracted from the vanilla bean. Mix well until thoroughly blended.
  6. Prepare Peaches: Thinly slice the peaches and immediately sprinkle them with fresh lemon juice to prevent browning. Discard the peach pits.
  7. Assemble Roses: Spread approximately one tablespoon of the mascarpone mixture onto the center of each puff pastry strip. Layer the top half of each strip with the peach slices, allowing some slices to slightly hang over the edge.
  8. Add Preserves (Optional): If desired, brush a very thin layer of peach preserves mixed with lemon juice over the peach slices for extra flavor. Use sparingly to avoid sogginess.
  9. Fold and Roll: Fold the bottom half of the puff pastry strip over the peaches and mascarpone, then gently roll the dough from left to right to create a rose shape.
  10. Place in Molds: Repeat the process with all strips and place each peach rose into a large silicone muffin tin or individual silicone muffin cups to hold their shape during baking.
