Ingredients

Brownie Base

  • 1 box brownie mix
  • Eggs, oil, and water as called for on the brownie mix box

Mint Frosting

  • 1/2 cup butter (1 stick), softened
  • 2 1/2 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon peppermint extract
  • 5+ drops green food coloring

Decorations

  • 1/2 cup chocolate chips
  • Candy eyes
  • Mini M&Ms
  • Pretzel sticks (broken in half)


Instructions

  1. Preheat and bake brownies: Preheat your oven according to the brownie mix package instructions. Prepare the brownie mix by combining it with eggs, oil, and water as directed on the box. Pour the batter into a greased 9×13-inch baking pan and bake as instructed. Once baked, allow the brownies to cool completely in the pan.
  2. Make the mint frosting: In a medium bowl, beat the softened butter on medium speed for about 2 minutes until smooth and creamy. Gradually add powdered sugar, milk, peppermint extract, and green food coloring. Beat on high for 1 to 2 minutes until the frosting is smooth and spreadable. Adjust with more powdered sugar or milk as necessary.
  3. Frost the brownies: Evenly spread the mint frosting over the cooled brownies using a spatula or knife. Allow the frosting to set slightly at room temperature to make decorating easier.
  4. Cut brownies: Once the frosting is set, cut the brownies into 15 to 18 pieces. Carefully remove the squares from the pan.
  5. Melt the chocolate: Place the chocolate chips in a microwave-safe bowl and microwave in 20-second intervals, stirring in between, until completely melted and smooth—approximately 1 minute total.
  6. Decorate with chocolate hair and mouth: Transfer the melted chocolate to a ziplock bag, seal it, and snip off a small corner. Drizzle chocolate over each brownie piece to create Frankenstein’s hair and mouth.
  7. Add the facial features: Place two candy eyes on each brownie piece and a mini M&M below for the nose or mouth detail.
  8. Attach the bolts: Insert two pretzel stick halves into the bottom sides of each brownie piece to represent Frankenstein’s bolts.
