Description
These Flourless Chocolate Chip Brownies are a delicious, gluten-free treat made primarily from black beans and cocoa powder. They are rich, fudgy, and packed with protein, offering a healthier twist on traditional brownies without sacrificing flavor.
Ingredients
Main Ingredients
- 1 (15 oz) can black beans, no salt added (drained and rinsed)
- 3 eggs
- 3 Tbsp plain Greek yogurt
- 1/4 cup unsweetened cocoa powder
- 3/4 cup coconut sugar (or other granulated sweetener)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
- 1/3 cup chocolate chips (preferably Lily’s or any sugar-free chocolate chips)
Instructions
- Preheat Oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius) to prepare for baking the brownies.
- Blend Ingredients: Using a food processor or high-powered blender, pulse the drained and rinsed black beans until mashed. Then add eggs, Greek yogurt, unsweetened cocoa powder, coconut sugar, vanilla extract, baking powder, and a pinch of salt. Process until the mixture is smooth and well combined.
- Add Chocolate Chips and Bake: Stir in the chocolate chips gently. Pour the brownie batter into a greased skillet or an 8×8 inch baking pan. Bake in the preheated oven for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow the brownies to cool completely in the pan before slicing. For an extra treat, serve warm brownies topped with your favorite ice cream.
Notes
- Be sure to rinse the black beans thoroughly to avoid any canned flavor.
- Using coconut sugar or a granulated sweetener keeps the brownies gluten-free and refined sugar-free.
- Letting brownies cool completely helps them set and makes slicing easier.
- Optional: Use sugar-free or dark chocolate chips to reduce sugar content further.
- Serving suggestion: Pair with a scoop of vanilla ice cream for an indulgent dessert.
