- 1.5 pounds sweet potatoes, peeled
Seasonings & Toppings
- 5 tablespoons vegan butter, melted
- 2 tablespoons fresh herbs (rosemary & thyme recommended)
- 1/2 teaspoon garlic salt
- 1 teaspoon pepper
- 1/2 cup vegan parmesan (Trader Joe’s suggested)
- Flakey sea salt, optional, for serving
Instructions
- Preheat and Prepare: Preheat the oven to 400 degrees F and lightly grease a cast iron skillet or baking dish to prevent sticking.
- Slice the Sweet Potatoes: Using a mandoline or a very sharp knife, thinly slice the peeled sweet potatoes for even cooking.
- Mix Seasonings: Place the sliced potatoes in a mixing bowl and add the melted vegan butter, fresh herbs, garlic salt, pepper, and vegan parmesan. Use your hands to thoroughly and evenly coat all slices with the seasoning mixture.
- Layer the Potatoes: Arrange the seasoned slices in the cast iron skillet in a circular pattern to fit snugly together, creating an attractive layered bake.
- Bake Covered: Cover the skillet with foil and bake in the preheated oven for 40 minutes to allow the potatoes to soften.
- Bake Uncovered and Broil: Remove the foil and continue baking for an additional 20 minutes. For a crispier top, turn the oven to broil for the last few minutes, watching carefully to prevent burning.
- Add Finishing Touches and Serve: Garnish with extra fresh herbs and a sprinkle of flakey sea salt if desired. Serve hot for the best flavor and texture.
