Ingredients
Wet Ingredients
- 1 large egg
- 2 tablespoons lemon juice
- ½ cup oil (vegetable, coconut, light olive oil, or melted butter)
- ½ teaspoon vanilla extract
Dry Ingredients
- ½ cup + 2 tablespoons granulated sugar
- 1¾ cups all-purpose flour
- 1½ teaspoons baking powder
Other
- 1 cup chopped strawberries
- Additional granulated sugar for sprinkling on top (optional)
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven. Set your oven to 350°F (180°C) and line one or two cookie sheets with parchment paper to prevent sticking and promote even baking.
- Combine wet ingredients. In a large bowl, whisk together the egg, lemon juice, oil, vanilla extract, and granulated sugar until the mixture is smooth and well blended.
- Add dry ingredients. Gradually add the all-purpose flour and baking powder to the wet ingredients, mixing until everything is just combined. Avoid overmixing to keep cookies tender.
- Incorporate strawberries. Gently fold in the chopped strawberries, taking care not to break them up too much to preserve their juicy texture within the cookie dough.
- Form the cookies. Shape the dough into balls roughly the size of a golf ball. Place them onto the prepared cookie sheets, spaced adequately to allow for spreading. Sprinkle a little granulated sugar on top of each dough ball for added sweetness and a light crunch.
- Bake. Bake in the preheated oven for approximately 15 minutes, until the edges are lightly golden and the cookies are set.
- Cool and serve. Allow the cookies to cool completely on the baking sheets or on a wire rack. If desired, dust with powdered sugar before serving for a lovely finishing touch.
Notes
- Use fresh, ripe strawberries for the best flavor and texture.
- Variations of oil can subtly change the flavor profile—try coconut oil for a tropical hint or melted butter for richness.
- Chilling the dough for 30 minutes before baking can help cookies hold their shape better.
- Store cookies in an airtight container at room temperature for up to 3 days or freeze for longer storage.
