Wet Ingredients

  • 1 stick (4 ounces) unsalted butter, VERY cold and cut into tiny pieces
  • 1 large egg
  • 1/2 cup whole milk
  • 2 tablespoons heavy cream (plus extra 2 tablespoons for glaze)
  • 1 teaspoon vanilla extract
  • 1 large egg, beaten (for egg wash)
  • 1 teaspoon water (for egg wash)

  • 1 cup fresh strawberries, hulled and quartered


Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 400°F (204°C). Line a large baking sheet with parchment paper to prevent sticking and set it aside for later use.
  2. Mix Dry Ingredients: In a large bowl, combine the all-purpose flour, salt, baking powder, baking soda, and granulated sugar. Stir well to ensure all dry ingredients are evenly distributed.
  3. Incorporate Butter: Cut the very cold, cubed unsalted butter into the flour mixture using your fingers, two forks, or a pastry cutter. Continue working the butter into the mixture until it resembles a coarse meal with small pea-sized bits.
  4. Combine Wet Ingredients: In a small bowl, whisk together one large egg, whole milk, and two tablespoons of heavy cream. Pour this wet mixture into the flour and butter mixture and use a fork to gently stir everything together until just moistened. Be careful not to overmix.
  5. Fold in Strawberries: Gently fold in the quartered fresh strawberries using a rubber spatula. Some berries may break slightly, which is fine and will add flavor and moisture.
  6. Shape Dough: Turn the loose dough onto a lightly floured work surface. Knead gently a few times as needed to bring it together, then shape it into an 8-inch circle. Try to handle the dough as little as possible to keep it tender.
  7. Cut Into Wedges: Using a sharp knife or bench scraper, cut the dough circle into 8 even wedges. Carefully transfer these scones to the prepared baking sheet, spacing them about 2 inches apart.
  8. Apply Egg Wash and Sugar: In a small bowl, whisk together the beaten egg with 1 teaspoon of water to make an egg wash.
