  • 4 cups vegetable broth
  • 2 tablespoons pure maple syrup
  • 1/2 cup coconut milk (can use heavy cream)

Instructions

  1. Sauté aromatics: In a large pot, heat the olive oil over medium-high heat. Add the chopped onion and apple, cooking until soft, about 5 minutes. Then add the minced garlic and bay leaf and cook for an additional minute to release their flavors.
  2. Add pumpkin and spices: Stir in the pumpkin purée, grated fresh ginger, kosher salt, ground cinnamon, nutmeg, paprika, ground cloves, freshly ground black pepper, and vegetable broth. Mix everything together thoroughly.
  3. Simmer the soup: Lower the heat to a simmer and cook the soup for 10 minutes to allow the flavors to meld. Once done, remove and discard the bay leaf.
