Description
This easy pumpkin bread recipe yields a moist, flavorful loaf perfect for autumn or anytime you crave a cozy treat. Made with simple pantry ingredients like pumpkin puree, warm spices, and vanilla, it comes together quickly and bakes into a tender bread with a wonderful cinnamon and nutmeg aroma.
Ingredients
Dry Ingredients
- 1¾ cups all-purpose flour (210g)
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- ¼ teaspoon grated nutmeg
Wet Ingredients
- 1⅓ cups pumpkin puree (300g)
- 1¼ cup granulated sugar (250g)
- ⅔ cup vegetable oil (160ml)
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with baking spray to prevent sticking.
- Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, and grated nutmeg until evenly combined.
- Combine Wet Ingredients: In a separate medium-sized bowl, thoroughly whisk the pumpkin puree, granulated sugar, vegetable oil, eggs, and vanilla extract until the mixture is smooth and well combined.
- Combine Wet and Dry Mixtures: Pour the wet mixture into the dry ingredients and gently stir with a spatula or spoon until just combined, being careful not to overmix to keep the bread tender.
- Pour Batter and Bake: Pour the batter into the prepared loaf pan and spread evenly. Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center comes out with a few moist crumbs and the top is springy to the touch. Optionally, after 30 minutes, cover the loaf loosely with aluminum foil to prevent over-browning.
- Cool the Bread: Remove the bread from the oven and let it cool in the pan for 15 minutes. Then carefully transfer the loaf to a wire rack and allow it to cool completely before slicing.
Notes
- Do not overmix the batter to keep the bread moist and tender.
- You can use canned or homemade pumpkin puree.
- Storing the pumpkin bread in an airtight container at room temperature will keep it fresh for up to 3 days, or refrigerate for up to a week.
- For added texture, consider folding in chopped nuts or chocolate chips before baking.
- Let the bread cool fully before slicing to ensure clean slices.
