Instructions
- Preheat oven and melt butter: Preheat your oven to 350°F (175°C). Place the 1/4 cup of butter in a 9-inch glass baking dish and put it in the oven as it heats to melt the butter completely.
- Prepare the batter: In a large bowl, combine the flour, 2/3 cup of sugar, baking powder, and salt. Add the milk and the egg to the dry ingredients and stir until just combined. Pour this batter evenly over the melted butter in the baking dish, but do not stir.
- Mix peaches with spices and sugar: In a separate bowl, mix the peeled peaches with 1/3 cup sugar, vanilla extract, cinnamon, and nutmeg. Stir gently to coat the peaches well.
- Assemble the cobbler: Spoon the peach mixture over the batter in the baking dish carefully, taking care not to stir the batter and peaches together.
- Add the brown sugar topping: Sprinkle the 1/4 cup of brown sugar evenly over the peaches and batter.
- Bake and broil: Bake the cobbler for 40-45 minutes or until the batter is golden brown and cooked through. For an extra crispy top, broil the cobbler for a few minutes at the end—watch closely to prevent burning.
- Serve: Remove the cobbler from the oven and let it cool slightly. Serve warm with a scoop of vanilla ice cream if desired.
