  • 2 1/2 cups Old Fashioned rolled oats
  • 1/3 cup cocoa powder
  • 1/4 cup mini chocolate chips
  • 1/4 cup unsweetened shredded coconut
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon cinnamon

Wet Ingredients

  • 1/2 cup creamy peanut butter (no sugar added, or substitute sunflower butter or tahini for nut free)
  • 1/2 cup honey (or agave syrup for vegan)


Instructions

  1. Mix Ingredients: Combine 2 1/4 cups of rolled oats with cocoa powder, mini chocolate chips, shredded coconut, kosher salt, cinnamon, peanut butter, and honey in a mixing bowl. Blend thoroughly until the dough forms. If the dough feels sticky, gradually add the remaining 1/4 cup of oats until it reaches a rollable consistency based on the creaminess of your peanut butter and type of oats used.
  2. Chill the Dough: Place the bowl in the freezer for 5 minutes to firm up the mixture. This helps the dough become stiff and easier to shape into balls. If the dough is too crumbly after chilling, add a small amount of peanut butter and honey. If still sticky, mix in more oats.
  3. Shape Energy Bites: Using your hands or a 1 1/2-inch cookie scoop, form the dough into 20 small uniform balls by pressing the mixture firmly together. This helps each bite maintain its shape.
  4. Store and Enjoy: Store the energy bites refrigerated to further firm up the texture. They can be eaten immediately or kept in the refrigerator for up to 2 weeks for optimal freshness.
