Ingredients

Pizza Sauce

  • 28 ounce can whole tomatoes, drained
  • 2 cloves garlic, minced
  • 1 Tablespoon olive oil
  • 1 teaspoon white wine vinegar
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste

Mini Halloween Pizzas

  • 3 10-inch flour tortillas
  • 2 teaspoons olive oil
  • 4 slices Mozzarella cheese
  • 1 slice Cheddar cheese
  • 4 large black olives
  • 1/4 cup pizza sauce
  • 2 Tablespoons shredded mozzarella cheese


Instructions

  1. Prepare Pizza Sauce: Place drained whole tomatoes in the bowl of a food processor fitted with a steel blade. Add minced garlic, olive oil, white wine vinegar, and dried oregano. Process until the mixture is smooth, about 30 seconds. Season with salt and freshly ground black pepper to taste, then set aside. Yield is about 2 cups of sauce.
  2. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with non-stick aluminum foil to prevent sticking and make cleanup easier, and set aside.
  3. Prepare Tortilla Bases: Cut six circles approximately 4 1/2 to 5 inches in diameter from the flour tortillas. Brush both sides of each tortilla circle lightly with olive oil. Heat a skillet over medium heat and cook each tortilla for 2 to 3 minutes per side until golden brown and crispy. Transfer the browned tortillas onto the prepared baking sheet.
  4. Create Cheese Shapes: Using the slices of mozzarella cheese, cut out three baby ghosts, one friendly ghost, and a Pac Man ghost shape (using an egg-shaped cookie cutter). Use kitchen shears to cut a zigzag pattern on the bottom of the Pac Man ghost for a spooky effect. Cut thin strips of mozzarella cheese to form the mummy pizza’s bandages. From the cheddar slice, cut a Jack O’Lantern shape.
  5. Prepare Spooky Olive Decorations: Slice black olives in half lengthwise for spider bodies. Cut 8 thin olive strips to create spider legs. Slice black olives to make 4 round eyes, 8 small eyes for ghosts, plus 1 smile shape, and additional small olive pieces for the eyes and mouth details of the Jack O’Lantern. Use mozzarella scraps to create the Jack O’Lantern’s eyes and mouth.
  6. Assemble Cheese Characters: Place two small olive eyes on each baby ghost shape. Add two olive eyes and a mouth on the friendly ghost. Position two sliced olives as eyes on the Pac Man ghost. Arrange mozzarella strips on the mummy pizza shape and add two sliced olives as eyes. Finish the Jack O’Lantern with mozzarella eyes and mouth along with a bell pepper stem for the pumpkin’s top.
  7. Add Sauce and Cheese Toppings: Spread 2 teaspoons of the prepared pizza sauce evenly on each tortilla crust. Top one tortilla with 2 tablespoons of shredded mozzarella cheese only, leaving the other tortillas with just sauce as the base.
  8. Bake Initial Pizzas: Bake the prepared tortilla pizzas in the preheated 400°F oven for 6 minutes to allow the cheese to melt and the crust to crisp further.
  9. Add Final Toppings and Finish Baking: Remove the baking sheet from the oven. Build the spider decoration using the sliced black olives on the mozzarella-topped pizza. Place the cheese character toppings on the other pizzas. Return the baking sheet to the oven and bake for an additional 1 to 2 minutes, just until the cheese toppings start to melt slightly.
