Description

Ingredients

Meat and Seasoning

  • 1 lb lean ground beef
  • 1 packet taco seasoning (or homemade)
  • 2/3 cup water (158g)
  • 1 Tablespoon oil

Base and Sauces

  • 20 corn tortillas
  • 2 cups refried beans (260g or 16 oz can)
  • 1 1/4 cups red enchilada sauce (240g or 10 oz can)

Cheese and Toppings

  • 2 cups shredded cheddar cheese (226g)
  • 1 Roma tomato, diced
  • 1/2 cup sliced olives (71g)
  • 3 green onions, chopped
  • Sour cream (for garnish, optional)


Instructions

  1. Cook the Ground Beef: In a skillet over medium heat, cook the ground beef, breaking it into small crumbles with a wooden spoon. Once cooked through, drain any excess grease. Stir in the taco seasoning and water, combining thoroughly. Simmer until the mixture thickens slightly and flavors meld.
  2. Crisp the Tortillas: Heat the oil in a small skillet over medium-high heat. Once hot, fry the corn tortillas one at a time for about 30-45 seconds per side, or until they are golden and slightly crisp. Remove and place on paper towels to drain excess oil.
  3. Assemble the Mexican Pizzas: On a baking sheet, lay one crispy tortilla. Spread a thin layer of enchilada sauce over it, then a layer of refried beans followed by a spoonful of the taco meat. Sprinkle shredded cheddar cheese on top. Place a second tortilla over this layer, then spread with more enchilada sauce and another sprinkle of cheese.
  4. Bake: Preheat the oven to 400°F (204°C). Bake the assembled pizzas for about 10 minutes or until the cheese is melted and bubbly.
