  • 2 cups fresh Italian basil (approx 4 oz), leaves only
  • 2 whole peeled garlic cloves
  • 1/4 cup freshly squeezed lemon juice (or lime juice)

  • 10-12 whole black peppercorns
  • 1/2 teaspoon salt


Instructions

  1. Prepare The Basil: Remove the basil leaves from the stems, discarding the stems. Measure out 2 cups of lightly packed basil leaves (about 4 oz) and wash them thoroughly with water.
  2. Drain Water: Drain the washed basil leaves well to remove excess moisture. Using a salad spinner can help spin off the extra water for better consistency in the dressing.
  3. Blend Ingredients: Add the basil leaves, garlic cloves, lemon juice, extra virgin olive oil, black peppercorns, and salt into the small jar of a blender or food processor. Blend for 60 seconds until the basil and garlic are well combined with the liquids.
  4. Adjust for Blending Device: If using a large food processor or a Vitamix with wide blades, consider doubling the recipe to ensure proper blending, as small batches may not blend evenly.
  5. Store and Use: Transfer the vinaigrette into a clean glass jar. Use it immediately or refrigerate for up to one week. For longer storage, freeze the vinaigrette for up to 4 months. Always mix well before use to recombine ingredients.

  • For a more intense garlic flavor, you can increase the garlic cloves to 3.
