Ingredients
Batter and Vegetables
- 1½ cups all-purpose flour
- ½ cup cornstarch (or rice flour)
- 2 teaspoons kosher salt
- 1 egg
- 1½ cups water
- 1 tablespoon sesame oil
- 6 green onions (cut into 3-inch pieces)
- 1 carrot (julienned)
- ½ zucchini (julienned)
- 1 bell pepper (julienned; or half red, half green)
- A handful of finely shredded cabbage
Dipping Sauce
- ½ cup soy sauce (light soy preferred, or tamari or coconut aminos)
- 2 teaspoons rice vinegar
- 1 scallion (white part only, finely chopped)
- 1 teaspoon sesame oil
- 1 teaspoon honey
- ½ teaspoon toasted sesame seeds
- ½ teaspoon gochugaru (Korean red pepper flakes, optional)
For Cooking
- 3 tablespoons vegetable oil (for frying)
Instructions
- Prepare the batter: In a large bowl, whisk together all-purpose flour, cornstarch (or rice flour), and kosher salt. Add the egg, water, and sesame oil, whisking until the batter is smooth and free of lumps.
- Add vegetables: Gently fold in the prepared green onions, carrot, zucchini, bell pepper, and shredded cabbage until they are evenly coated with the batter, ensuring a well-distributed veggie mix.
- Rest the batter: Let the batter sit at room temperature for 15 minutes. This resting period hydrates the flour fully, resulting in a better texture and crispiness when cooked.
- Make the dipping sauce: While the batter rests, mix soy sauce, rice vinegar, chopped scallion, sesame oil, honey, toasted sesame seeds, and gochugaru (if using) in a small bowl. Stir well and set aside to allow flavors to meld.
- Heat the pan: Warm 2 tablespoons of vegetable oil in a large nonstick skillet over medium-high heat, preparing it for frying the pancakes.
- Cook the pancakes: Scoop about ½ to ¾ cup of the batter into the hot skillet, spreading it thinly and evenly to form a round pancake. Fry for 3 to 4 minutes on each side until pancakes turn golden brown and crispy.
- Repeat frying: Continue cooking remaining batter in batches, adding more vegetable oil as needed between pancakes to maintain crispness and prevent sticking.
- Keep warm: Place cooked pancakes on a wire rack set over a sheet pan in a 200°F oven to keep them warm and crisp while you finish the batch.
- Serve: Slice the cooked pancakes into wedges and serve warm or at room temperature alongside the prepared dipping sauce for a delicious Korean appetizer or snack.
Notes
- You can substitute cornstarch with rice flour for a gluten-free option.
- Resting the batter improves pancake texture by hydrating the flour fully.
- Adjust the amount of gochugaru in the dipping sauce for preferred spice level or omit if you prefer milder flavors.
- Use a nonstick skillet for easier flipping and better pancake shape.
- Serve pancakes immediately for the best crispy texture, though they also taste great at room temperature.
