Description

This easy garlic butter steak bites recipe features tender, juicy sirloin steak cubes seared to perfection in a skillet, then coated in a rich garlic butter sauce and topped with fresh parsley. Ready in just 20 minutes, it’s a perfect savory dish for a quick dinner or impressive appetizer.

Ingredients

Steak

  • 1.5 pounds sirloin steak (or ribeye, strip steak, or another tender well-marbled cut)
  • Salt & pepper, to taste

Cooking

  • 1 tablespoon olive oil
  • 4 tablespoons butter (1/2 stick), divided
  • 4-5 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Prepare the steak: Remove the steak from the refrigerator and allow it to warm to room temperature for about 30 minutes to ensure even cooking.
  2. Cut and season: Cut the steak into 1-inch cubes and season generously with salt and pepper on all sides.
  3. Sear the steak: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat until hot. Add steak cubes in a single layer without crowding the pan—cook in batches if necessary. Let the steak cook undisturbed for about 2 minutes per side to get a good sear and reach medium doneness. Transfer the cooked steak to a plate and repeat with remaining steak.
  4. Make garlic butter sauce: Reduce heat to medium-low. Add remaining butter and minced garlic to the skillet. Stir almost constantly for 1-2 minutes until garlic is fragrant and lightly cooked but not browned or burnt.
  5. Toss and serve: Remove the skillet from heat, return the cooked steak and any accumulated juices to the pan, and toss to coat evenly in the garlic butter sauce. Sprinkle with chopped parsley and serve immediately.

Notes

  • Allowing the steak to come to room temperature helps it cook more evenly.
  • Do not overcrowd the pan when searing the steak to ensure a proper crust forms.
  • Cook the garlic just until fragrant to avoid a bitter burnt taste.
  • Resting the steak bites briefly after cooking can help retain juices if you prefer.
  • Optional sides include mashed potatoes, roasted vegetables, or a fresh salad.
