Ingredients
Strawberry Puree
- 12½ ounces strawberries (3/4 pound), cleaned and sliced
- ½ cup granulated sugar
Mousse
- 1 cup cold heavy cream (whipping cream with at least 30% fat content)
Topping
- Extra fresh sliced strawberries for garnish
Instructions
- Prepare Strawberry Puree: Clean and slice the strawberries thoroughly. In a blender or food processor, combine the sliced strawberries and granulated sugar. Puree until smooth. Remove ½ cup of the puree and set it aside for serving later.
- Whip the Cream: In a cold bowl, pour the heavy cream and beat it until stiff peaks form. This means the cream should hold its shape firmly when the beaters are lifted.
- Combine Cream with Puree: Gently fold the remaining strawberry puree into the whipped cream, taking care not to deflate the mixture. This will create a fluffy strawberry mousse.
- Assemble the Mousse: Distribute the reserved ½ cup of strawberry puree evenly among 4 small to medium glasses (about 1 cup capacity each). Then spoon the strawberry mousse on top of the puree layer in each glass.
- Chill and Serve: Refrigerate the assembled mousses for approximately 1 hour or overnight to set and chill completely. Just before serving, top each with fresh sliced strawberries for an attractive finish. Enjoy this refreshing dessert!
