  • 4 cups (500 g) all-purpose flour, divided (plus more if needed)
  • 2 envelopes (about 4 ½ teaspoons) rapid rise yeast
  • ¼ cup (50 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon kosher salt
  • 1 ½ cups (366 g) whole milk, warmed (110°F to 120°F)
  • 2 tablespoons salted butter, melted (plus more for brushing)
  • 1 teaspoon kosher salt, optional for sprinkling


Instructions

  1. Combine Dry and Wet Ingredients: In the bowl of a stand mixer fitted with a dough hook, add 3 cups of flour, rapid rise yeast, granulated sugar, egg, and 1 teaspoon kosher salt.
  2. Add Warm Milk and Knead: Heat the whole milk until very warm, between 110°F and 120°F. Pour the warm milk into the flour mixture. Knead on medium speed for 2 minutes, scraping the sides of the bowl as needed.
  3. Add More Flour and Continue Kneading: Add ½ cup more flour and knead at medium speed for another 2 minutes.
  4. Incorporate Remaining Flour and Knead: Add the remaining ½ cup of flour. Continue kneading until the dough is very soft and starts to pull away from the sides of the bowl. If the dough is too wet, add additional flour ¼ cup at a time until it reaches the proper consistency.
  5. First Rise: Cover the bowl with plastic wrap and let the dough rise for 30 minutes or until it doubles in size.
  6. Prepare Baking Dish: Spray a 9×13-inch baking dish with nonstick cooking spray.
  7. Shape Rolls: Punch down the risen dough, then divide it into 16 equal-sized pieces. Shape each piece into a ball and place in the prepared baking dish. If necessary, use a second greased pan for any extra rolls.
  8. Second Rise: Cover the rolls with plastic wrap and let them rise again for 30 minutes or until doubled in size.
  9. Preheat Oven: Preheat the oven to 375°F (190°C).
  10. Bake Rolls: Bake the rolls for 16-17 minutes or until they turn golden brown.
  11. Finish and Serve: Remove the rolls from the oven, brush them with melted butter, and sprinkle with kosher salt if desired. Serve warm and enjoy!
