Description

This Easy Corn Casserole is a comforting, creamy, and slightly sweet side dish that’s perfect for family dinners or holiday gatherings. Made with Jiffy Corn Muffin mix, whole kernel corn, creamed corn, sour cream, and melted butter, it combines simple ingredients into a warm, golden baked casserole that’s sure to please any crowd.

Ingredients

Ingredients

  • 1 box of Jiffy Corn Muffin mix (8 ounces, dry mix only)
  • 15 ounces whole kernel corn (drained)
  • 15 ounces creamed corn (not drained)
  • 1 cup sour cream
  • 1/2 cup melted butter

Instructions

  1. Preheat Oven: Preheat your oven to 350ºF (175ºC) and lightly spray an 8×8 inch baking pan with cooking spray to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the dry Jiffy Corn Muffin mix, drained whole kernel corn, creamed corn (with liquid), sour cream, and melted butter. Stir until all ingredients are thoroughly blended.
  3. Pour Mixture: Pour the combined corn mixture evenly into the prepared baking dish, spreading it out to fill the pan.
  4. Bake: Bake uncovered for 45 to 50 minutes, or until the casserole is set and the top is lightly golden brown.
  5. Season and Garnish: Remove from oven and season with salt and black pepper to taste. Optionally, garnish with fresh parsley or sliced green onions before serving for added color and flavor.

Notes

  • Make sure to drain the whole kernel corn well to prevent excess moisture.
  • Use fresh parsley or green onions as garnish to add a fresh contrast to the creamy casserole.
  • This casserole pairs wonderfully with holiday meals, barbecues, or potlucks.
  • For a slight twist, add shredded cheese to the mix before baking for extra richness.
