- 2 tbsp oyster sauce
- 1.5 tbsp dark soy sauce

- 1 tsp brown sugar
- 1 tsp grated ginger
- 3 garlic cloves, minced
Main Ingredients
- 16 oz Chinese egg noodles or spaghetti, linguine, fettuccine
- 1 lb chicken breast, cut into bite-sized pieces
- 1 tbsp vegetable oil
- 2.5 cups mixed vegetables, sliced 1/4” thick
- 1 scallion, chopped
- 2 tsp toasted sesame seeds (for garnish)
Instructions
- Prepare the Sauce: In a bowl, combine chicken or vegetable stock, oyster sauce, dark soy sauce, low-sodium soy sauce, cornstarch, toasted sesame oil, brown sugar, grated ginger, and minced garlic. Stir until the sugar is fully dissolved. Set this sauce mixture aside.
- Marinate the Chicken: Toss the bite-sized chicken pieces with 1 tablespoon of the prepared sauce. Allow the chicken to marinate briefly while you prepare the vegetables, ensuring the flavors start to develop.
- Cook the Noodles: Boil the Chinese egg noodles or your choice of pasta until just al dente, about 1 to 2 minutes less than the package instructions recommend. Immediately rinse with cold water to stop cooking and prevent sticking. Toss the drained noodles with a little oil to keep them separate and moist.
- Cook the Chicken and Vegetables: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken pieces and cook until they are nearly cooked through and lightly browned.
- Stir-fry the Vegetables: Add the mixed vegetables to the skillet with the chicken and stir-fry until the vegetables are tender-crisp, usually about 3-5 minutes.
- Combine Noodles and Sauce: Add the cooked noodles to the skillet. Pour the remaining sauce over the noodles, chicken, and vegetables. Toss everything together and cook for an additional 2-3 minutes, allowing the sauce to thicken and coat all ingredients evenly.
- Garnish and Serve: Remove from heat and garnish with chopped scallions and toasted sesame seeds. Serve hot for a delightful homemade Lo Mein experience.
