  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook Manicotti: Cook the manicotti pasta according to the package instructions, then drain well. Lay the cooked noodles on parchment paper to dry and cool completely before filling.
  2. Prepare Baking Dish: Preheat the oven to 350°F (175°C). Spray a 9×13 inch baking dish with cooking spray, then spread a thin layer of marinara sauce along the bottom of the dish. Set it aside.
  3. Make Cheese Filling: In a large bowl, combine the ricotta cheese, 2 cups shredded mozzarella, grated Parmesan, eggs, chopped parsley, salt, and black pepper. Mix until the filling is smooth and evenly incorporated.
