Description

This easy Cabbage and Egg Stir Fry is a quick, flavorful side dish ready in just 10 minutes. Perfect for beginners, it requires no marinating and features shredded cabbage stir-fried with aromatic garlic and ginger, combined with fluffy scrambled eggs and a touch of light soy sauce for a deliciously savory finish.

Ingredients

Vegetables

  • 1/4 middle size cabbage, washed, drained completely, and shredded
  • 2 garlic cloves, minced
  • 1 thumb-sized piece ginger, minced
  • 2 fresh small Thai peppers, cut into circles (optional)

Egg Mixture

  • 2 large eggs, whisked with a small pinch of salt and pepper

Seasonings & Oils

  • 3 tbsp vegetable cooking oil, divided
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1 tbsp light soy sauce

Instructions

  1. Prepare the cabbage: Wash the cabbage thoroughly and hand shred it into small pieces. Ensure it is drained completely to avoid excess water during frying.
  2. Whisk the eggs: In a bowl, crack the eggs and whisk them with a small pinch of salt and pepper until well combined.
  3. Cook the eggs: Heat some vegetable oil in a pan over medium heat. Pour in the whisked eggs and let them set slightly. Once they start to firm, gently break the eggs into small fluffy pieces. Remove the eggs from the pan and set aside.
  4. Saute aromatics: If needed, add more vegetable oil to the pan. Fry the minced ginger and garlic until fragrant and aromatic, about 30 seconds to 1 minute.
  5. Cook the cabbage: Add the shredded cabbage to the pan and stir fry for about 1 minute until it softens slightly but still retains some crunch.
  6. Combine and season: Return the scrambled eggs to the pan with the cabbage. Add light soy sauce, salt, pepper, and the sliced Thai peppers if using. Mix everything thoroughly to combine flavors evenly.
  7. Serve: Once everything is heated through and flavored well, your quick cabbage and egg stir fry is ready to serve hot as a delightful side dish.

Notes

  • Ensure the cabbage is thoroughly drained to prevent sogginess during stir frying.
  • The Thai peppers add heat but can be omitted or adjusted based on your spice preference.
  • Use light soy sauce for a mild, balanced saltiness; regular soy sauce can be used but may increase sodium content.
  • Stir fry quickly over medium-high heat to maintain the cabbage’s texture and freshness.
  • This dish is best served immediately for optimal texture and flavor.
