Description

This Dorito Beef Taco Salad Bowl combines savory seasoned ground beef with crunchy Nacho Cheese Doritos, fresh vegetables, and rich cheddar cheese to create a quick and satisfying meal. Perfect for a weekday dinner, this layered taco salad offers a delicious blend of textures and flavors with a hint of freshness from cilantro and tomatoes.

Ingredients

Beef Mixture

  • 1 lb ground beef
  • 1 (1 oz) packet taco seasoning
  • ¼ cup water

Salad Base and Toppings

  • 1 (9.5 oz) bag Nacho Cheese Doritos
  • 1 cup shredded mild cheddar cheese
  • 1 cup canned black beans, rinsed and drained
  • 1 cup canned corn, rinsed and drained
  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • Fresh cilantro, for garnish
  • Optional: guacamole, sour cream, salsa (for serving)

Instructions

  1. Cook the Beef: Warm a large pan over medium-high heat. Add the ground beef and cook, breaking it up as it browns, for about 7 to 10 minutes until fully cooked. Drain off any excess grease.
  2. Season the Beef: Stir in the taco seasoning packet and ¼ cup water. Mix well to coat all the beef, then allow it to simmer for 1 to 2 minutes. Remove from heat and set aside.
  3. Prepare the Salad Bowls: Begin by placing a generous layer of Nacho Cheese Doritos at the bottom of each serving bowl, creating a crunchy base.
  4. Layer the Ingredients: Spoon one-third of the seasoned beef over the Doritos. Then add one-third each of shredded cheddar cheese, black beans, corn, chopped romaine lettuce, and halved cherry tomatoes in layers.
  5. Add Toppings: Top each bowl with your favorite additions such as guacamole, sour cream, or salsa for extra flavor and creaminess.
  6. Garnish and Serve: Finish each salad bowl with a sprinkle of fresh cilantro. Serve immediately to retain the crispness of the Doritos.

Notes

  • For a vegetarian version, substitute the ground beef with seasoned plant-based protein or extra beans.
  • Ensure to serve immediately after assembling to keep the Doritos crunchy.
  • Use reduced-fat cheese and lean ground beef to make this dish lower in fat.
  • Add avocado slices or jalapeños for added texture and flavor.
  • Can be easily doubled or tripled for larger gatherings.
