Instructions
- Hard boil the eggs: Place the eggs in a pot and cover with cold water. Bring to a rolling boil, then reduce heat to medium and cook for 12 minutes until fully hard-boiled. Remove eggs and place them in cold water to cool completely.
- Prepare the eggs: Once cooled, peel the eggs carefully. Slice each egg in half lengthwise and gently remove the yolks, placing them in a mixing bowl.
- Mix the filling: To the bowl with yolks, add 2 tablespoons of beet puree, spicy brown mustard, paprika, salt, and black pepper. Mix thoroughly until smooth and well combined for a vibrant, flavorful filling.
- Fill the egg whites: Using a piping bag or spoon, carefully pipe or spoon the beet-egg-mustard mixture back into the egg white halves, mounding it slightly to resemble the eyeball’s iris base.
- Add olive pupils: Top each filled egg half with a sliced black olive, positioning it in the center to mimic a pupil.
- Create the bloodshot effect: Place a small drop of hot sauce onto the center of each olive slice to add a fiery highlight and simulate the pupil’s shine.
- Decorate with beet puree veins: Using the remaining 2 tablespoons of beet puree, decorate around the egg whites to create a bloody-vein effect, enhancing the spooky appearance.
