Description

These Cutest Decorated Pumpkin Patch Chocolate Cupcakes are moist, vegan-friendly chocolate cupcakes topped with vibrant orange frosting piped to look like pumpkins. Finished with pretzel stick stems and green leaf frosting, they’re perfect for fall celebrations or themed parties.

Ingredients

For the Cupcakes

  • 1 cup almond milk + 1 teaspoon white vinegar
  • ⅓ cup canola oil
  • ¾ cup granulated sugar
  • 1 teaspoon chocolate, coffee, or vanilla extract
  • 1 cup all-purpose flour or gluten-free flour (like Bob’s Red Mill)
  • ⅓ cup unsweetened cocoa powder
  • ¾ teaspoon baking soda
  • ½ teaspoon baking powder
  • ⅛ teaspoon salt

For the Frosting

  • 1 cup vegan butter or regular butter (room temperature)
  • 3 cups powdered sugar (add more for firmer consistency)
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons almond milk or orange juice
  • Generous pinch of salt
  • Orange gel food coloring
  • Green gel food coloring
  • Pretzel sticks (for pumpkin stems)

Instructions

  1. Prepare the Vegan Chocolate Cupcakes: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners and lightly spray with non-stick cooking spray. Set aside.
  2. Make the Buttermilk Substitute: In a measuring cup, combine almond milk and vinegar. Set aside for 5-10 minutes to curdle.
  3. Cream Oil and Sugar: In a large bowl, use a mixer to beat the canola oil and granulated sugar together until gritty in texture.
  4. Add Extract: Mix in your choice of chocolate, coffee, or vanilla extract thoroughly.
  5. Combine Dry Ingredients: In a separate bowl, whisk together the flour, unsweetened cocoa powder, baking soda, baking powder, and salt until evenly mixed.
  6. Mix Wet and Dry Ingredients: Alternate adding the dry ingredients and the curdled milk mixture to the oil and sugar mixture, beginning and ending with the dry ingredients. Mix until just combined.
  7. Fill Muffin Tins: Pour the batter evenly into the prepared muffin tins, filling each liner about ¾ full.
  8. Bake: Bake for 15-18 minutes, or until a toothpick inserted into the center of the cupcakes comes out clean.
  9. Cool: Let cupcakes cool completely on a wire rack before frosting.
  10. Prepare the Orange Frosting: In a large mixing bowl, use a mixer to blend vegan butter, powdered sugar, vanilla extract, and almond milk or orange juice. Start on low speed and gradually increase to medium-high until the frosting is light, fluffy, and smooth, about 1-2 minutes.
  11. Color Frosting: Color most of the frosting with orange gel food coloring, reserving about ½ cup. Color the reserved frosting green for the pumpkin leaves.
  12. Decorate the Cupcakes: Once cooled, place the orange frosting in a pastry bag fitted with a large star tip and pipe a swirl on top of each cupcake to resemble a pumpkin.
  13. Add Pumpkin Stems: Break pretzel sticks into small pieces and insert one into the center of each frosted cupcake to mimic pumpkin stems.
  14. Pipe Leaves: Using the green frosting in a pastry bag fitted with a leaf tip or small round tip, pipe leaves around the pumpkin stems for a finishing touch.

Notes

  • Use gluten-free flour for a gluten-free version.
  • Option to substitute orange juice for almond milk in frosting for extra citrus flavor.
  • Adjust powdered sugar amount in frosting to achieve desired consistency.
  • Make sure cupcakes are completely cool before decorating to prevent frosting from melting.
  • Decorations can be customized with different food coloring or toppings.
