Ingredients
- For the Shrimp:
- 12 oz prawns (about 350 g), peeled and deveined
- 2 cloves garlic, finely chopped
- 2 spring onions, thinly sliced
- Toasted sesame seeds, for garnish
- ¼ tsp salt
- ¼ tsp black pepper
- 1 tsp sesame oil
- Vegetable oil, for deep frying
- 1 egg (use the egg white)
- For the Coating Mix:
- 1 cup corn starch (or potato starch/flour)
- ⅓ cup plain flour (all-purpose flour)
- ¼ tsp baking soda
- For the Honey Sauce:
- 2 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp sugar
- 1 tsp corn starch (or potato starch/flour)
- 1 tsp sesame oil
- 1 tbsp lemon juice (or lime/orange juice)
- ¼ cup chicken stock (or vegetable stock/water)
Instructions
- Pat shrimp dry and season with salt, pepper, and sesame oil. Set aside.
- Mix honey, soy sauce, sugar, corn starch, sesame oil, lemon juice, and stock in a bowl. Stir until fully dissolved.
- In another bowl, combine corn starch, plain flour, and baking soda.
- Add egg white to the seasoned shrimp and mix well.
- Dredge shrimp in the flour mixture until evenly coated.
- Heat oil to 350°F (175°C) and fry shrimp in batches for 2–3 minutes until golden. Drain on a wire rack.
- In a separate pan, simmer the honey sauce until slightly thickened.
- Toss the fried shrimp in the sauce until fully coated.
- Garnish with spring onions and sesame seeds before serving.
Notes
- For extra heat, add chili flakes or hot sauce to the sauce.
- Swap lemon juice with orange juice for a citrus twist.
