Ingredients
For the Feta Rolls
- 8 sheets phyllo pastry
- 8 oz (225g) feta cheese, crumbled
- 2 tbsp cream cheese (optional for creaminess)
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh dill, chopped
- 1 garlic clove, minced
- Black pepper to taste
- Olive oil for brushing
- Oil for frying (light olive oil or vegetable oil)
For the Hot Chili Honey
- ¼ cup honey
- 1–2 tsp chili flakes (adjust to heat preference)
- 1 tsp lemon juice
- Pinch of smoked paprika (optional)
Instructions
- Prepare the filling: In a bowl, mix crumbled feta, cream cheese, parsley, dill, garlic, and black pepper until combined to create a creamy and flavorful filling.
- Assemble the rolls: Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Fold it in half lengthwise to create a long strip. Place 1–2 tablespoons of the feta filling near one end. Roll tightly like a spring roll, folding the sides in as you roll to seal the filling inside. Repeat this process for all sheets and filling.
- Heat oil for frying: In a pan, heat enough light olive oil or vegetable oil over medium heat to fry the rolls. The oil should be hot enough to crisp the rolls without burning them.
- Fry the rolls: Fry each roll in the hot oil until deeply golden and crispy on all sides, about 2–3 minutes per side. Turn carefully to ensure even cooking and crispiness.
- Drain excess oil: Remove the fried rolls and place them on paper towels to drain excess oil, keeping them crispy and light.
- Prepare hot chili honey: In a small bowl, briefly heat honey with chili flakes, lemon juice, and smoked paprika for 15–20 seconds until it is runny and the flavors are infused.
