Ingredients

For the Feta Rolls

  • 8 sheets phyllo pastry
  • 8 oz (225g) feta cheese, crumbled
  • 2 tbsp cream cheese (optional for creaminess)
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 garlic clove, minced
  • Black pepper to taste
  • Olive oil for brushing
  • Oil for frying (light olive oil or vegetable oil)

For the Hot Chili Honey

  • ¼ cup honey
  • 12 tsp chili flakes (adjust to heat preference)
  • 1 tsp lemon juice
  • Pinch of smoked paprika (optional)


Instructions

  1. Prepare the filling: In a bowl, mix crumbled feta, cream cheese, parsley, dill, garlic, and black pepper until combined to create a creamy and flavorful filling.
  2. Assemble the rolls: Lay one sheet of phyllo pastry on a clean surface and brush lightly with olive oil. Fold it in half lengthwise to create a long strip. Place 1–2 tablespoons of the feta filling near one end. Roll tightly like a spring roll, folding the sides in as you roll to seal the filling inside. Repeat this process for all sheets and filling.
  3. Heat oil for frying: In a pan, heat enough light olive oil or vegetable oil over medium heat to fry the rolls. The oil should be hot enough to crisp the rolls without burning them.
  4. Fry the rolls: Fry each roll in the hot oil until deeply golden and crispy on all sides, about 2–3 minutes per side. Turn carefully to ensure even cooking and crispiness.
  5. Drain excess oil: Remove the fried rolls and place them on paper towels to drain excess oil, keeping them crispy and light.
  6. Prepare hot chili honey: In a small bowl, briefly heat honey with chili flakes, lemon juice, and smoked paprika for 15–20 seconds until it is runny and the flavors are infused.
