Description

A refreshing and creamy cucumber tomato salad perfect for a quick side dish or light meal. Featuring fresh, crisp vegetables tossed in a tangy sour cream dressing, this easy recipe takes just 15 minutes to prepare and serves six.

Ingredients

Vegetables

  • 3 medium tomatoes, cut into 1-inch pieces
  • 1 English cucumber (or 3-4 small cucumbers), halved and sliced
  • 1/2 medium onion, thinly sliced

Dressing

  • 1 large garlic clove, minced
  • 4 Tbsp sour cream
  • 1 Tbsp mayonnaise (optional)
  • 1/8 tsp black pepper
  • Salt, to taste

Instructions

  1. Cut the Vegetables: Prepare the tomatoes by cutting them into 1-inch pieces. Slice the cucumbers in half lengthwise, then slice them thinly. Thinly slice half a medium onion. Combine all these prepared vegetables in a medium bowl.
  2. Make the Dressing: In a small bowl, stir together the sour cream, optional mayonnaise, minced garlic, and black pepper until smooth and well combined.
  3. Combine and Serve: Pour the creamy dressing over the mixed vegetables and toss gently to coat everything evenly. Add salt to taste just before serving to enhance the flavors.

Notes

  • Mayonnaise is optional; omit for a lighter, tangier dressing.
  • For extra freshness, chill the salad in the refrigerator for 10-15 minutes before serving.
  • Use English cucumbers for fewer seeds and a milder flavor.
  • Adjust garlic and pepper quantities according to taste preferences.
  • Suitable as a side dish for grilled meats or sandwiches.
