Description
This creamy coleslaw dressing recipe combines a tangy and sweet blend of mayonnaise, honey, lemon juice, and simple seasonings to perfectly complement a fresh and crunchy mix of green and red cabbage, carrot, and green onion. It’s easy to prepare and makes an ideal side dish for BBQs, picnics, or as a refreshing topping for sandwiches and burgers.
Ingredients
For the Slaw
- 4 cups shredded green cabbage
- 2 cups shredded red cabbage
- 1 large carrot, grated or julienned
- 0.5 cup chopped green onion
For the Creamy Dressing
- 1 cup mayonnaise
- 2 tablespoons honey
- 1 teaspoon fine sea salt
- 0.5 teaspoon black pepper
- 2 tablespoons lemon juice
Instructions
- Prepare the Slaw Vegetables: Thoroughly wash the cabbage and green onion. Shred the green and red cabbage finely and grate or julienne the carrot. Chop the green onion into small pieces. Combine all these vegetables in a large mixing bowl and toss gently to mix evenly.
- Make the Creamy Dressing: In a separate bowl, whisk together the mayonnaise, honey, fine sea salt, black pepper, and lemon juice until the mixture is smooth and well combined. The lemon juice adds a fresh acidity while honey balances the flavors with a mild sweetness.
- Combine and Toss: Pour the creamy dressing over the prepared slaw vegetables. Using tongs or two large spoons, toss everything together until the cabbage mixture is evenly coated with the dressing.
- Chill and Serve: Cover the coleslaw bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld and the slaw to chill. Serve cold as a side dish or accompaniment to your main meal.
Notes
- You can substitute honey with maple syrup or agave nectar for a vegan option, but the recipe is not vegan due to mayonnaise.
- For an extra crunch, add chopped celery or toasted sunflower seeds.
- If you prefer a tangier dressing, increase the lemon juice by a teaspoon at a time according to taste.
- Store leftover coleslaw in an airtight container in the refrigerator for up to 2 days for optimal freshness.
- Use full-fat mayonnaise for the creamiest texture, or light mayonnaise to reduce calories.
