- Blend the ingredients: In a blender, combine the vanilla Greek yogurt, freshly squeezed lime juice, lime zest, and cream of coconut. Blend until the mixture is smooth and fully incorporated, ensuring an even creamy texture throughout.
- Fill the molds and pre-freeze: Pour the blended mixture evenly into your popsicle molds. Place the molds in the freezer for about 1 hour to allow the popsicles to begin firming up but not fully freeze.
- Add sticks and freeze completely: Once the mixture starts to firm, insert the popsicle sticks into each mold. Return to the freezer and freeze completely for at least 4 hours or overnight until solid.
