Truffle Base
- 11 oz. white chocolate, chopped into small pieces
- 5 Tablespoons unsalted butter
- 3 Tablespoons heavy cream
- Pinch of salt
- 1 teaspoon orange or vanilla extract (optional)
Add-ins and Coating
- 1/3 cup finely chopped dried cranberries
- 1/3 cup finely chopped toasted pistachios
- 1/2 cup powdered sugar
Instructions
- Melt Butter and Cream: In a small saucepan over low to medium heat, melt the butter. Add the heavy cream and stir just until the mixture combines smoothly. Remove from heat.
- Add Flavor and Salt: Stir in a pinch of salt and optionally the orange or vanilla extract to the butter and cream mixture. Set aside.
- Melt White Chocolate: Set up a double boiler by placing a heatproof bowl over simmering water. Add the chopped white chocolate and stir occasionally until it is smooth and fully melted. Be careful not to heat above 105°F to avoid chocolate separation.
- Combine Mixtures: Remove the melted chocolate from heat. Gently fold the lukewarm butter and cream mixture into the melted chocolate using a rubber spatula, ensuring both are approximately the same temperature to maintain a smooth consistency.
- Add Cranberries and Pistachios: Stir in the finely chopped dried cranberries and toasted pistachios until evenly distributed. Cover the mixture with plastic wrap pressed directly onto the surface and let it rest at room temperature for 1 hour to avoid film formation.
- Chill Until Firm: Refrigerate the covered mixture for 2 to 3 hours until it is firm enough to scoop and shape.
- Shape Truffles: Using a small spoon or melon baller, scoop out the chilled mixture and roll it into approximately 1-inch balls. Clean your hands with a paper towel between rolling each truffle to prevent sticking.
- Coat with Powdered Sugar: Roll each ball generously in powdered sugar to coat thoroughly.
- Store Properly: Place the finished truffles in an airtight container and refrigerate for up to one week or freeze for longer storage.
