- 15 oz. black beans, drained and rinsed
- 15.25 oz. whole kernel sweet corn, drained
- 1 small red bell pepper, diced
- 1 jalapeno pepper, minced
- 1/3 cup fresh cilantro, finely chopped
- ¾ cup diced red onion
- 2 avocados, diced
Dressing Ingredients
- ¼ cup lime juice
- 2 tablespoons red wine vinegar
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 tablespoon honey
- ¼ teaspoon chili powder
Instructions
- Prepare the Dressing: In a small bowl, combine the lime juice, red wine vinegar, salt, ground black pepper, honey, and chili powder. Stir well until the honey is dissolved and set the dressing aside.
- Mix the Dip Ingredients: In a large bowl, add the drained and rinsed black beans, drained sweet corn, diced red bell pepper, minced jalapeno pepper, chopped cilantro, diced red onion, and diced avocados. Toss the ingredients gently to combine them evenly.
- Add the Dressing: Pour the prepared dressing over the mixture in the large bowl. Toss everything carefully to coat the ingredients evenly with the dressing without mashing the avocado.
- Serve or Refrigerate: Serve immediately for the freshest flavor, or cover and refrigerate until ready to serve. This dip can be prepared a day in advance to allow flavors to meld.
- Optional Freshness Tip: If preparing ahead, toss the dip with an additional tablespoon of lime juice just before serving. For best freshness, slice and add the avocado just before serving to prevent browning.
