Ingredients

Flatbread Batter

  • 1 cup cottage cheese (2% or 4% fat)
  • 2 large eggs
  • 1 teaspoon dried oregano


Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) and line a half sheet baking sheet (13 x 18 inches) with parchment paper to prevent sticking.
  2. Blend ingredients: In a food processor or high-speed blender, combine the cottage cheese, eggs, and dried oregano. Process until the mixture is completely smooth.
  3. Spread the batter: Pour the blended mixture into the center of the prepared baking sheet and use a spatula to spread it into a rectangle about 8 x 10 inches in size. Avoid spreading it too thin or across the entire baking sheet.
  4. Bake the flatbread: Place the baking sheet in the oven and bake for 25-30 minutes until the flatbread is golden brown and cooked through in the center.
