Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper and grease it lightly to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, combine the mashed bananas, eggs, cottage cheese, maple syrup, and vanilla extract. Mix thoroughly until the mixture is smooth and well incorporated.
  3. Add Dry Ingredients: Add the almond flour, baking soda, and cinnamon to the wet mixture. Stir until everything is fully combined. It’s normal if the mixture has some lumps from the cottage cheese.
  4. Prepare for Baking: Pour the batter into the prepared loaf pan. If you want to add optional mix-ins like walnuts, chocolate chips, or blueberries, fold them in before pouring.
  5. Bake the Bread: Place the loaf pan in the oven and bake for about 50 minutes. After approximately 30 minutes, check the top; if it is browning too quickly, cover it loosely with foil to prevent burning.
  6. Check Doneness: Test the bread by inserting a toothpick into the center. If it comes out clean, the bread is done. If not, bake for a few more minutes and recheck.
