Instructions
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper and grease it lightly to prevent sticking.
- Mix Wet Ingredients: In a large bowl, combine the mashed bananas, eggs, cottage cheese, maple syrup, and vanilla extract. Mix thoroughly until the mixture is smooth and well incorporated.
- Add Dry Ingredients: Add the almond flour, baking soda, and cinnamon to the wet mixture. Stir until everything is fully combined. It’s normal if the mixture has some lumps from the cottage cheese.
- Prepare for Baking: Pour the batter into the prepared loaf pan. If you want to add optional mix-ins like walnuts, chocolate chips, or blueberries, fold them in before pouring.
