Ingredients
For the Crust
- 25 chocolate sandwich cookies (such as Oreos)
- 5 tbsp salted butter, melted
For the Filling
- 1 cup creamy peanut butter
- 1 (8-ounce) package cream cheese, softened
- 1 1/4 cups powdered sugar
- 8 ounces whipped topping (such as Cool Whip), thawed
Instructions
- Preheat Oven: Preheat your oven to 350˚F to prepare for baking the crust.
- Make the Crust: Place the chocolate sandwich cookies in a food processor and pulse until finely crushed. Transfer the crumbs to a mixing bowl and stir in the melted butter until evenly combined. Press this mixture firmly into the bottom and up the sides of a pie plate to form the crust. Bake in the oven for 5 to 7 minutes until set, then remove and allow to cool completely.
- Prepare the Filling: Using a stand mixer fitted with a whisk attachment, beat the peanut butter and softened cream cheese together until smooth and creamy. Add the powdered sugar and continue beating until fully incorporated. Gently fold in the thawed whipped topping and beat until the filling is smooth and fluffy, making sure to scrape down the sides of the bowl as needed.
- Assemble and Chill: Pour the creamy filling into the cooled chocolate cookie crust, spreading it evenly with a knife or spatula. Place the pie in the refrigerator and chill for at least 4 hours to set before serving.
Notes
- Ensure the cream cheese is softened to room temperature for a smooth filling.
- Thaw the whipped topping completely for best results when mixing.
- For a firmer crust, you can bake it for an additional 1-2 minutes but be careful not to burn.
- The pie should be stored in the refrigerator and consumed within 3 days for optimal freshness.
- Optional garnish: top with chopped peanuts or a drizzle of melted chocolate before serving.
