Ingredients
Dry Ingredients
- 1 ¼ cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
Wet Ingredients
- 1/2 cup unsalted butter, softened
- 1/2 cup all natural creamy peanut butter
- 1 cup packed dark brown sugar (light brown sugar can also be used)
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 tablespoon honey
- 1/2 tablespoon sour cream or plain Greek yogurt
Topping and Coating
- 1 cup chocolate chips
- 1 teaspoon coconut oil
- 1/2 cup crushed pretzels
- 1/2 cup toffee pieces
Instructions
- Preheat and mix dry ingredients: Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until evenly combined.
- Cream butter, peanut butter, and sugar: In the bowl of an electric mixer, combine the softened unsalted butter, creamy peanut butter, and packed dark brown sugar. Mix on medium-low speed until the mixture is smooth and well combined.
- Add wet ingredients: Reduce the mixer speed to low and add the egg, vanilla extract, honey, and sour cream (or Greek yogurt). Beat for about 1 minute until the mixture is smooth and creamy.
- Incorporate dry ingredients: Gradually add the flour mixture to the wet ingredients while increasing the mixer speed to medium-low. Mix just until all the dry ingredients are incorporated, being careful not to overmix.
- Shape cookies: Scoop a tablespoonful of dough and roll it into a ball using your hands or a cookie scoop. Arrange the dough balls on a cookie sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake: Bake the cookies in the preheated oven for 10 to 12 minutes, or until the edges turn golden brown.
- Cool cookies: Let the cookies cool on the baking sheet for 5 to 10 minutes to allow them to firm up slightly, then transfer them to a wire rack to cool completely.
- Prepare topping mixture: In a small bowl, combine the crushed pretzels and toffee pieces.
- Melt chocolate coating: Line two baking sheets with wax paper. In a small pot over low heat, melt the chocolate chips and coconut oil together, stirring frequently to prevent burning until smooth.
- Dip and decorate cookies: Once the cookies have completely cooled, dip each cookie halfway into the melted chocolate. Immediately sprinkle the chocolate-coated part with the pretzel and toffee mixture. Place each finished cookie on the prepared wax paper-lined baking sheets.
- Set chocolate: Allow the chocolate to set at room temperature for about 30 minutes. To speed this up, place the baking sheets in the refrigerator for approximately 5 minutes until the chocolate hardens.
- Store: Store cookies in an airtight container at room temperature for 3 to 5 days or freeze for longer storage.
Notes
- Use light or dark brown sugar depending on your preference; both work well.
- You can substitute sour cream with plain Greek yogurt for similar texture and flavor.
- For more convenience, use a small cookie scoop to portion dough consistently.
- To speed chocolate setting, refrigerate dipped cookies briefly after coating.
- These cookies freeze well, so you can prepare them ahead and enjoy later.
- Feel free to customize toppings by adding nuts or different crushed candies.
- Ensure cookies are fully cooled before dipping to prevent melting chocolate from sliding off.
