Wet Ingredients

  • 1 cup packed dark brown sugar (light brown sugar can also be used)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 tablespoon honey
  • 1/2 tablespoon sour cream or plain Greek yogurt

Topping and Coating

  • 1 cup chocolate chips
  • 1 teaspoon coconut oil
  • 1/2 cup crushed pretzels
  • 1/2 cup toffee pieces


Instructions

  1. Preheat and mix dry ingredients: Preheat your oven to 350°F (175°C). In a medium bowl, whisk together the all-purpose flour, baking soda, and salt until evenly combined.
  2. Cream butter, peanut butter, and sugar: In the bowl of an electric mixer, combine the softened unsalted butter, creamy peanut butter, and packed dark brown sugar. Mix on medium-low speed until the mixture is smooth and well combined.
  3. Add wet ingredients: Reduce the mixer speed to low and add the egg, vanilla extract, honey, and sour cream (or Greek yogurt). Beat for about 1 minute until the mixture is smooth and creamy.
  4. Incorporate dry ingredients: Gradually add the flour mixture to the wet ingredients while increasing the mixer speed to medium-low. Mix just until all the dry ingredients are incorporated, being careful not to overmix.
