Description
Brigadeiros are a classic Brazilian treat featuring a rich, creamy chocolate fudge made from sweetened condensed milk, cocoa powder, and butter. These bite-sized sweets are rolled into balls and coated with chocolate sprinkles, making them the perfect indulgence for parties and celebrations. With a simple stovetop method and minimal ingredients, brigadeiros offer a delightful and authentic taste of Brazil in every bite.
Ingredients
For the Brigadeiro Mixture
- 3 tablespoons unsalted butter, divided
- 1 (14-ounce) can sweetened condensed milk (not low-fat or fat-free)
- 1/3 cup cocoa powder (not Dutch-process)
- 1/8 teaspoon salt
For Coating
- Chocolate sprinkles or additional cocoa powder, for decorating
Instructions
- Soften Butter: Soften 1 tablespoon of butter and rub it evenly over a large plate. Set this prepared plate aside to prevent the mixture from sticking later.
- Make Mixture: In a nonstick 10-to-12-inch pot over medium-low heat, melt the remaining 2 tablespoons of butter. Add the sweetened condensed milk, cocoa powder, and salt. Reduce heat slightly and stir nonstop for 8 to 13 minutes until the mixture thickens and starts to pull away from the edges of the pot. To test, run a wooden spoon through the center and ensure the mixture takes a few seconds to flow back; this indicates the correct consistency. Transfer the thickened mixture to the buttered plate and refrigerate for at least 30 minutes until set.
- Form Chocolate Balls: Once the mixture has chilled and set, butter your hands to prevent sticking. Pinch off a portion about 1/2 to 1 tablespoon and roll it between your palms into a smooth, round ball. Repeat with the rest of the mixture to form approximately 12 balls.
- Coat with Sprinkles: Pour chocolate sprinkles or cocoa powder onto a flat plate. Roll each brigadeiro ball in the coating to cover completely.
- Enjoy: Brigadeiros are best enjoyed the same day, offering a rich and creamy chocolate experience perfect for sharing and celebrations.
Notes
- Use regular sweetened condensed milk, not low-fat or fat-free, for the best creamy texture.
- When cooking the mixture, patience is important to achieve the right consistency that allows the brigadeiros to hold their shape.
- Butter your hands each time you roll the balls to prevent sticking.
- Sprinkles are traditional for coating, but cocoa powder offers a less sweet alternative.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Bring to room temperature before serving for the best texture.
