Ingredients
Chicken Crust
- 1 lb ground chicken
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 tsp dried Italian herbs (oregano, basil)
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 tbsp olive oil (for cooking)
Caesar Salad Topping
- 2 cups romaine lettuce, chopped
- 1/4 cup Caesar dressing (preferably creamy)
- 1/4 cup grated Parmesan cheese
- 1/2 cup cooked chicken pieces, seasoned and crisped or chicken bacon bits (optional)
- Freshly ground black pepper, to taste
Instructions
- Prepare the Chicken Crust: In a large bowl, combine the ground chicken, shredded mozzarella, grated Parmesan, egg, dried Italian herbs, garlic powder, salt, and pepper. Mix well until all ingredients are thoroughly incorporated forming a dough-like consistency.
- Form the Crust: Heat the olive oil in a large non-stick skillet over medium heat. Shape the chicken mixture into a round, flat pizza base about 1/2 inch thick. Carefully place it in the skillet.
- Cook the Chicken Crust: Cook the crust on medium heat for about 5-7 minutes or until the bottom is nicely browned and firm enough to flip. Then carefully flip and cook the other side for another 5-7 minutes until cooked through and golden brown.
- Prepare Caesar Salad Topping: In a bowl, toss the chopped romaine lettuce with the Caesar dressing until evenly coated. Set aside.
- Assemble the Pizza: Once the chicken crust is fully cooked and slightly cooled, top it evenly with the dressed romaine lettuce. Sprinkle with the grated Parmesan cheese and optionally scatter the cooked chicken pieces or chicken bacon bits on top. Add freshly ground black pepper to taste.
- Serve: Slice the Chicken Crust Caesar Salad Pizza and serve immediately to enjoy the crisp chicken base combined with fresh Caesar salad topping.
Notes
- Be sure to cook the chicken crust thoroughly to ensure it is safe to eat and firm enough to hold the toppings.
- You can add a little extra olive oil when cooking if the crust starts to stick to the pan.
- For added flavor, consider seasoning the chicken pieces before crisping them for the salad topping.
- This pizza is best served fresh; leftovers can be stored but the lettuce topping is best added just before eating.
- Feel free to swap the Caesar dressing for a lighter or vegan alternative as desired.
