Description

This Caramel Pecan Turtle Pumpkin Pie is a delightful no-bake dessert combining creamy pumpkin pudding with the rich flavors of caramel and toasted pecans in a graham cracker crust. Perfect for the fall season, this pie offers a creamy texture layered with sweet, spiced pumpkin and a crunchy pecan finish, making it an irresistible treat for gatherings or special occasions.

Ingredients

Crust and Toppings

  • ⅓ cup caramel topping
  • 6 ounce graham cracker crust (pre-made)
  • ½ cup chopped pecans
  • Additional caramel topping for drizzle (optional)
  • Additional chopped pecans for garnish (optional)

Filling

  • 6.8 ounces instant vanilla pudding mix
  • 1 cup milk
  • 1 cup canned pumpkin puree
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 8 ounces Cool Whip, divided (1½ cups for filling, remaining for topping)

Instructions

  1. Prepare the crust: Pour ⅓ cup of caramel topping evenly onto the bottom of the pre-made graham cracker crust. Then sprinkle ½ cup of chopped pecans over the caramel layer, creating a rich and crunchy base.
  2. Make the filling: In a large bowl, combine the instant vanilla pudding mix with 1 cup of milk, 1 cup canned pumpkin puree, 1 teaspoon cinnamon, and ½ teaspoon nutmeg. Beat together until the mixture is smooth and well blended.
  3. Incorporate Cool Whip: Fold 1½ cups of Cool Whip gently into the pumpkin pudding mixture to add creamy texture and lightness. Once mixed, spoon this filling evenly into the prepared graham cracker crust over the caramel and pecan base.
  4. Chill the pie: Refrigerate the pie for at least 1 hour to allow it to set properly and for flavors to meld.
  5. Add finishing touches: Before serving, spread the remaining Cool Whip over the top of the pie. Drizzle additional caramel topping on the surface and sprinkle more chopped pecans if desired for garnish and extra flavor.

Notes

  • This recipe requires refrigeration for at least 1 hour to set the filling well.
  • Using pre-made graham cracker crust simplifies preparation but homemade crust can also be used.
  • For extra texture, toast the pecans lightly before adding to the pie.
  • This pie can be prepared a day in advance and stored in the refrigerator.
  • If you prefer a less sweet pie, adjust the amount of caramel topping to your taste.
