Description

This Caramel Chex Mix is a delightful, crunchy snack combining popcorn, Chex cereal, and pretzels coated in a rich homemade caramel sauce. Topped off with chocolate candies for a sweet finish, this easy-to-make treat is perfect for parties, movie nights, or anytime you crave a sweet and salty snack.

Ingredients

Main Mix

  • 8 cups popped popcorn
  • 4 cups Chex rice cereal
  • 2 cups pretzel twists

Caramel Sauce

  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

Toppings

  • Chopped Rolos (quantity as desired, approx. 1/2 cup)
  • Chocolate chips (approx. 1/2 cup)
  • M&Ms (approx. 1/2 cup)

Instructions

  1. Preheat Oven: Preheat your oven to 300°F (150°C) and lightly spray a large baking sheet to prevent sticking.
  2. Combine Dry Mix: In a large bowl (preferably with a lid), combine the popped popcorn, Chex cereal, and pretzel twists. Mixing in a lidded bowl allows you to shake the mix easily, ensuring even distribution.
  3. Prepare Caramel Sauce: In a small saucepan over medium heat, combine the brown sugar, unsalted butter, and light corn syrup. Stir continuously until the mixture comes to a boil.
  4. Boil Sauce: Allow the mixture to boil without stirring for 5 minutes to achieve the proper caramel consistency.
  5. Add Flavorings: Remove the saucepan from heat and stir in the vanilla extract and baking soda thoroughly. This will give the caramel a light, airy texture.
  6. Coat Mix with Caramel: Quickly pour the caramel sauce over the popcorn mixture. Close the lid and shake the bowl to coat everything evenly, or use a spatula to toss if your bowl doesn’t have a lid. Act fast as the caramel will begin to harden.
  7. Bake the Mix: Spread the coated mix evenly on the prepared baking sheet. Bake in the preheated oven for 10 minutes. Remove and toss the mix to ensure even baking, then bake for an additional 5 to 10 minutes. Check after 5 minutes to prevent burning or bitterness.
  8. Cool the Mix: Once baking is complete, spread the mixture onto wax or parchment paper to cool completely at room temperature. This prevents the candy toppings from melting later.
  9. Add Candies and Serve: After the mix has cooled, gently toss in the chopped Rolos, chocolate chips, and M&Ms. Serve immediately or store in an airtight container for freshness.

Notes

  • Use a large bowl with a lid to make mixing easier and less messy when coating with caramel.
  • Do not stir the caramel mixture while boiling to prevent crystallization.
  • Keep a close eye during baking as caramel can burn quickly and create a bitter taste.
  • Add chocolate candies only after the mixture has fully cooled to avoid melting.
  • Store the finished Chex Mix in an airtight container to maintain freshness and crunch.
  • For a nutty variation, consider adding chopped nuts along with the dry mix.
