- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1/4 tsp cinnamon
Cheesecake Layer
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
Apple Layer
- 3 medium Granny Smith apples, peeled and diced
- 2 tbsp lemon juice
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
Streusel Topping
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, cold and cubed
- 1/4 cup chopped pecans (optional)
Caramel Sauce
- 1 cup granulated sugar
- 1/4 cup water
- 1/2 cup heavy cream
- 2 tbsp unsalted butter
- 1/4 tsp salt
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line a 9×13 inch baking pan with parchment paper to ensure easy removal of bars later.
- Make the Crust: In a medium bowl, combine graham cracker crumbs, melted butter, sugar, and cinnamon. Mix thoroughly then press this mixture evenly into the bottom of the prepared baking pan, creating a firm crust layer.
- Bake Crust: Bake the crust in the preheated oven for 10 minutes. After baking, remove and allow it to cool while preparing the other layers.
- Prepare Cheesecake Layer: In a bowl, beat softened cream cheese and sugar together until smooth and creamy. Add eggs one at a time, beating well after each addition to incorporate fully. Stir in vanilla extract to flavor the cheesecake layer.
- Assemble Cheesecake Layer: Pour the prepared cheesecake mixture over the cooled crust and spread it out evenly with a spatula.
- Prepare Apple Layer: In a separate bowl, toss diced Granny Smith apples with lemon juice, brown sugar, cinnamon, and nutmeg. This mixture will add a tart and spiced flavor to the bars.
- Add Apple Layer: Spread the apple mixture evenly over the cheesecake layer in the pan.
- Create Streusel Topping: Mix flour and brown sugar in a bowl. Cut in the cold cubed butter using a pastry cutter or your fingers until the mixture becomes crumbly. Stir in chopped pecans if using for added texture and flavor.
- Add Streusel Topping: Sprinkle the streusel crumb mixture evenly over the apple layer.
- Bake Bars: Place the assembled pan into the oven and bake for 45-50 minutes, or until the streusel topping is golden brown and the cheesecake is set but still slightly jiggly in the center.
- Cool and Chill: Remove from the oven and allow the bars to cool completely at room temperature. Then refrigerate for at least 2 hours to firm up and develop flavor.
- Make Caramel Sauce: In a saucepan over medium heat, combine granulated sugar and water. Stir until the sugar dissolves. Increase heat to medium-high and cook without stirring until the mixture turns a deep amber color, about 8-10 minutes. Remove from heat and carefully whisk in heavy cream—it will bubble vigorously. Stir in butter and salt until smooth and glossy. Allow the caramel to cool slightly.
- Serve: Cut the chilled bars into squares. Drizzle warm caramel sauce generously over each bar just before serving for a rich, indulgent finish.
Notes
- Use Granny Smith apples for their tartness which balances the sweetness of the caramel and cheesecake.
- Make sure cream cheese is softened to avoid lumps in the cheesecake layer.
- Chilling the bars after baking helps in clean slicing and enhances flavor melding.
- Be very careful when adding cream to hot caramel as it will bubble vigorously.
- Optional chopped pecans in the streusel add a nice crunch but can be omitted for nut-free version.
