Snack Mix
- 4 and ½ cups (135g) Rice Chex® cereal
- ¼ cup (57g) unsalted butter, cut into 8 slices
- 8 ounces (227g) high quality white chocolate
- 1 teaspoon almond extract
- 1 teaspoon vanilla extract
- ⅔ cup (134g) sprinkles
- 1 cup (120g) powdered sugar
Instructions
- Prepare cereal: Pour the Rice Chex cereal into a large bowl and set aside to be coated later.
- Melt chocolate mixture: In a medium saucepan set over low heat, combine the butter, white chocolate, almond extract, and vanilla extract. Stir constantly until everything is fully melted and smooth. Remove from heat promptly to prevent burning.
- Coat the cereal: Immediately pour the melted chocolate mixture over the prepared cereal. Gently stir with a spatula to evenly coat all the cereal pieces without breaking them.
- Add sprinkles: Transfer the coated cereal into a large zip-top bag or container with a tight lid. Add the sprinkles and shake vigorously to disperse them evenly throughout the mix.
- Add powdered sugar: Add the powdered sugar into the bag or container and shake again thoroughly until all the cereal is evenly coated with a white dusting.
