This simple yet elegant recipe is perfect as a side dish or a light vegetarian meal.
Ingredients
Main Ingredients
- ⅓ cup olive oil (plus 1 tablespoon for baking sheet)
- 1 head green cabbage (dark loose leaves removed and cut into ½ inch rounds)
Seasoning Mix
- 1 teaspoon kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Topping
- ¼ cup panko
- ¼ cup fresh herbs (finely chopped)
- 3 tablespoons Parmesan cheese (freshly grated)
Instructions
- Preheat Oven: Preheat your oven to 400ºF (200ºC) and line a baking sheet with parchment paper to prevent sticking.
- Prepare Cabbage: Remove any wilted cabbage leaves and trim the ends of the stem slightly to remove brown or dry parts but keep the full stem intact to hold the cabbage slices together. Slice the cabbage into ½ inch thick rounds.
- Mix Oil and Spices: In a small bowl, combine ⅓ cup olive oil with kosher salt, garlic powder, and smoked paprika, mixing well.
- Brush Cabbage: Brush both sides of each cabbage slice evenly with the olive oil and spice mixture. Arrange the slices on the prepared baking sheet.
- Bake Cabbage: Bake the cabbage steaks for 15 minutes, then flip each slice and bake for another 10 to 15 minutes, until tender and slightly caramelized.
- Toast Panko: While the cabbage is baking, heat a small pan over medium heat and toast the panko crumbs, stirring constantly to prevent burning, until golden brown.
- Season Panko: Add salt, garlic powder, and smoked paprika to the toasted panko, stir to mix well, then remove from heat and let cool slightly.
- Add Herbs and Cheese: Once cooled, stir in the finely chopped fresh herbs and freshly grated Parmesan cheese into the toasted panko mixture.
- Top and Serve: Remove the cabbage steaks from the oven, top each with the herbed panko and cheese mixture, and serve warm for the best flavor and texture.
Notes
- Make sure not to slice the cabbage too thin, as thicker steaks hold together better and roast nicely.
- Use fresh herbs like parsley, thyme, or chives for the topping to enhance flavor.
- To make this recipe vegan, omit the Parmesan or replace it with a vegan cheese alternative.
- Serve as a side dish to grilled meats or as a light vegetarian entrée.
- Leftover cabbage steaks can be reheated in the oven or air fryer for best texture retention.
