Ingredients
Ramen and Sauce
- 2 packages Buldak Carbonara ramen
- 3 Tbsp kewpie mayo
- 2 Tbsp peanut butter
- 1 clove garlic, grated
- 2 egg yolks
- 1 – 1.25 cups boiling hot water from cooking ramen
Garnishes
- Chopped green onions, to taste
- Sesame seeds, to taste
- Chili oil, optional, to taste
Instructions
- Cook the noodles: Prepare the Buldak Carbonara ramen noodles according to the package instructions. Once cooked, drain the noodles but reserve about 1 to 1.25 cups of the hot, starchy cooking water for the sauce.
- Prepare the sauce: While the noodles are cooking, combine the Buldak seasoning packets, kewpie mayo, peanut butter, grated garlic, and egg yolks in a large bowl. Mix thoroughly to form a thick paste. Gradually add the reserved boiling hot noodle water, starting with about 1 cup, stirring continuously until the mixture loosens and becomes a creamy soup. Adjust the water amount if you prefer a thinner consistency.
- Combine noodles and sauce: Add the cooked noodles into the creamy peanut butter and Buldak sauce mixture. Toss well to ensure the noodles are evenly coated with the sauce.
- Garnish and serve: Plate the coated noodles and garnish with chopped green onions, a sprinkle of sesame seeds, and drizzle with chili oil if you prefer extra spiciness. Serve immediately while warm for the best flavor and texture experience.
Notes
- Adjust the amount of Buldak seasoning according to your spice tolerance as it can be quite fiery.
- Kewpie mayo adds a unique umami and creaminess; regular mayo can be substituted but will alter the flavor slightly.
- Peanut butter should be smooth for easier mixing; natural peanut butter can be used but may require more stirring.
- Reserved noodle cooking water helps create a silky sauce and should be added hot to cook the egg yolks gently and avoid curdling.
- Feel free to customize garnishes like adding crushed peanuts or fresh herbs for more texture and flavor.
