Perfect for make-ahead mornings and enjoyed chilled.
Ingredients
Overnight Oats Base
- 2 cups old-fashioned rolled oats (approx. 170g)
- ½ cup milk (approx. 120ml; unsweetened soy milk recommended, any milk works)
- 1 cup blueberries (approx. 140g; fresh or frozen)
- 1 cup plain yogurt (approx. 230g; soy, coconut, or thick Greek-style yogurt)
- 2 teaspoons vanilla extract
- 1-2 teaspoons maple syrup (optional)
- ⅛ teaspoon table salt
Toppings
- 1 cup blueberries (fresh or frozen)
- 80 g dark chocolate (melted and slightly cooled; dairy-free recommended)
- ½ tablespoon coconut oil (optional; helps to thin the chocolate)
Instructions
- Combine Ingredients: Add the rolled oats, milk, frozen blueberries, yogurt, vanilla extract, maple syrup (if using), and salt to a high-speed blender. This step ensures all ingredients are incorporated for a smooth mixture.
- Blend Mixture: Blend on high until the mixture is smooth and creamy, resembling a thick batter. This creates a perfect texture for overnight soaking.
- Prepare Jars: Evenly divide the fresh or frozen blueberries among 4 jars or containers. This adds whole fruit bursts for texture and flavor.
- Pour Oat Mixture: Pour the blended oat mixture over the blueberries in each container, then gently smooth the tops to evenly cover the fruit.
- Prepare Chocolate Topping: If using, stir the melted dark chocolate and coconut oil together until fully combined and pour the mixture over the top of each jar for a rich finishing touch.
- Chill: Seal the jars or containers and refrigerate for at least 1½ hours or preferably overnight until the oats are chilled and set.
- Serve: Enjoy cold directly from the fridge, making for a quick and satisfying breakfast or snack.
Notes
- Use any milk or yogurt variety to suit dietary preferences.
- Maple syrup is optional and adds natural sweetness.
- Using frozen blueberries in the mixture helps blend while fresh blueberries maintain texture in the jars.
- Make sure chocolate is slightly cooled before mixing with coconut oil to avoid melting the coconut oil completely.
- The recipe is vegan if plant-based milk and yogurt are used, and dairy-free dark chocolate is chosen.
- Can be prepared the night before for convenience.
