Potatoes

Instructions

  1. Cook the Potatoes: Place the cut potatoes in a large pot and cover with cold water by about 1 inch. Bring the water to a boil over high heat, then reduce the heat and simmer the potatoes for approximately 10 minutes or until they are fork-tender. Drain the potatoes and set them aside to cool to room temperature.
  2. Make the Dressing: While the potatoes are cooling, whisk together the mayonnaise, dill pickle brine, apple cider vinegar, yellow mustard, grated garlic, sea salt, and several grinds of freshly ground black pepper in a medium bowl until smooth and well combined.
  3. Combine Potatoes and Dressing: Transfer the cooled potatoes to a large bowl. Add the prepared dressing and gently stir to coat the potatoes, mashing them slightly to create a creamy texture for the salad.
  4. Add Mix-ins: Fold in the diced celery, chopped dill pickles, fresh chives, chopped dill, and if using, the chopped hard-boiled eggs. Mix gently to distribute all ingredients evenly.
