Ingredients

Egg and Cheese Mixture

  • 5 large Eggs, beaten
  • 2 slices Cheese (of your choice)

Vegetables

  • 1 large Onion, sliced
  • 3 large Mushrooms, sliced
  • 1 handful Spinach
  • 1 large Tomato, sliced
  • 1/2 medium Green bell pepper (Capsicum), sliced

Other Ingredients

  • 2 Flour tortillas, burrito size (homemade or store-bought)
  • 1 tbsp Oil (divided)


Instructions

  1. Preparation: Gather and prepare all ingredients by slicing onions, mushrooms, tomato, and green bell pepper, and beating the eggs thoroughly.
  2. Sauté Onion and Mushrooms: Heat 1/2 tablespoon of oil in a pan over medium heat. Add the sliced onions and mushrooms and sauté until they develop a nice color and soften. Once cooked, transfer them to a plate and set aside.
  3. Sauté Spinach: In the same pan, add the spinach and sauté for a couple of minutes or until wilted. Remove from pan and set aside with the onions and mushrooms.
  4. Scramble Eggs: Add the remaining 1/2 tablespoon of oil to the pan over medium heat. Pour in the beaten eggs and let them cook undisturbed for about a minute until slightly set. Using a wooden spatula, gently stir the eggs, creating small curds, and cook until no longer liquid but still soft. Add the broken cheese slices, season with salt and pepper, mix gently until cheese softens, then remove from heat.
